- 1.5 lbs boneless skinless chicken breasts (or thighs), cut into 1-inch pieces
- 2 tbsp olive oil
- 1 cup breadcrumbs regular or Panko
- 1/3 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of cayenne pepper
Pat chicken dry with paper towels and cut into uniform bite-sized pieces.
