- 1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp soy sauce or coconut aminos for gluten-free
- 1 tbsp lemon juice
- 1 tbsp honey or maple syrup for vegan option
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
In a large bowl or resealable bag, add the cubed chicken. In a separate bowl, whisk together olive oil, soy sauce, lemon juice, honey, garlic powder, onion powder, smoked paprika, salt, and pepper.
Pour the marinade over the chicken and toss to fully coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
Heat your grill or grill pan over medium-high heat (400–450°F / 200–230°C).
Grill the marinated chicken for 3–5 minutes per side, until nicely charred and cooked through (internal temp of 165°F / 74°C).
Remove from heat and let rest for 3–5 minutes before serving. Serve warm with optional sauce or over rice, salads, or wraps.
